Restaurant Manager - Luso - MJMK Restaurants

£47,150 to £51,000 (dependent on experience)

Location: Full time, site based, W1T, London

Luso opened on Charlotte Street in September 2025, celebrating the diversity of Portugal's Iberian coastline and countryside. The menu blends the familiar with the contemporary, and the wine list reflects Portugal's variety, from under water aged wines to the country's long tradition of fortified wines, each bottle chosen with the same care that goes into every dish. At Luso, energy, curiosity and passion for detail come together with a warm, generous welcome for everyone who joins the team.

As Restaurant Manager, you will lead the dining room day to day, making sure every service runs smoothly and every guest leaves already planning their next visit. You will set the tone for the team on each shift, bringing warmth and precision in equal measure, and help Luso grow into a Charlotte Street favourite.

This role is made for an experienced restaurant manager, or an assistant manager ready for the next step, ideally from a quality-led, chef-driven restaurant. A love of wine, or a deep curiosity about Portuguese food and drink, will help you feel right at home here.

This is a hands-on, guest-focused leadership role.

Key Responsibilities

  • Lead every service from the floor, setting the pace, tone and standard of hospitality for every table.
  • Build, train and develop the front of house team, creating a place where people want to grow their careers.
  • Plan rotas that match the team to each service, while keeping labour costs on target.
  • Work closely with the kitchen team so front and back of house stay connected before, during and after service.
  • Champion the wine list, helping the team talk with ease about Portuguese wines, from fortified styles to rarer bottles.
  • Take ownership of guest feedback and VIP requests, turning every interaction into a reason to return.
  • Drive revenue through thoughtful service and strong sales, reviewing weekly results and acting on them.
  • Manage front of house stock, ordering and supplier relationships, with waste kept to a minimum.
  • Uphold health and safety, licensing and food hygiene standards so the restaurant is always inspection-ready.
  • Hold regular team briefings and one-to-ones so everyone feels informed, motivated and supported.

What We're Looking For

  • You'll thrive here if you love the energy of a full dining room and care about getting the details right. You will bring:
  • Proven experience as a Restaurant Manager or Assistant Restaurant Manager in a quality-led restaurant.
  • Genuine passion for food, drink and hospitality.
  • The ability to lead from the front and stay composed when the restaurant is at its busiest.
  • Strong commercial awareness, including comfort with P&Ls, labour and sales reporting.
  • An eye for detail, from the first greeting to the final goodbye.
  • Knowledge of Portuguese or Iberian wine, or an eagerness to learn it quickly.
  • A natural leadership style that brings out the best in people.
  • Clear, confident communication with guests, the team and the kitchen.
  • Energy that carries through every shift, with evenings and weekends when the dining room is at its best.

About MJMK Restaurants

MJMK Restaurants owns and operates a collection of award-winning restaurants. Founded in 2018 by lifelong friends Jake Kasumov and Marco Mendes, our journey began with Casa do Frango.

In 2020, we partnered with chef patron Santiago Lastra to open KOL, a restaurant in Marylebone celebrating Mexican cuisine with British ingredients. KOL has since earned a Michelin star and been named one of the World's 50 Best Restaurants.

2024 saw two new ventures: Fonda, a contemporary Mexican concept in Mayfair, our second collaboration with Santiago Lastra, and AngloThai in Marylebone, a debut restaurant from husband-and-wife John and Desiree Chantarasak, blending Thai flavours with British ingredients. Within three months of opening, AngloThai earned a Michelin star.

In the 2025 National Restaurant Awards, AngloThai was named The Square Opening of the Year and ranked 7th in the Top 100 list, followed by KOL at number 50. Luso, a contemporary Portuguese restaurant in Fitzrovia, opened in September 2025.

We're building ambitious restaurant brands with a focus on quality, creativity and guest experience, and we're just getting started.
