Junior Sous Chef Candidate Requirements:
- Ability to deliver consistently high-quality food and a great guest experience
- Confident working across all kitchen sections with flexibility and attention to detail
- Capable of executing prep for all food service operations as directed by senior chefs
- Knowledge of food safety practices, including Check 365 temperature entries
- Ability to complete accurate section orders and maintain stock levels
- Awareness of equipment maintenance and prompt reporting of any faults
- Strong team player with a positive attitude and excellent communication skills
- Proven ability to train and support CDPs within assigned sections
- A role model who champions culture, morale, and motivation within the kitchen
- Ability to manage prep volumes based on cover count
- Ensure all prep is reviewed and signed off by a senior team member
- Quickly escalate food quality or service issues to the Sous Chef
- Confident in supervising a section during service and ensuring team standards
- Strong communication with senior chefs on team and building-related concerns
- Ability to lead the team in the absence of a Sous Chef or during their holidays
- Organised approach to shift handovers and prep planning

About MJMK Restaurants
MJMK Restaurants own and operate a collection of award-winning restaurants. Founded in 2018 by lifelong friends Jake Kasumov and Marco Mendes, our journey began with Casa do Frango. In 2020, we partnered with chef patron Santiago Lastra to open KOL, a fine dining restaurant in Marylebone celebrating Mexican cuisine with British ingredients. In 2022, we launched Lisboeta, a premium restaurant in Fitzrovia with renowned Portuguese chef patron Nuno Mendes. 2024 saw two new ventures: Fonda, a contemporary Mexican concept in Mayfair - our second collaboration with Santiago Lastra - and AngloThai in Marylebone, a debut restaurant from husband-and-wife John and Desiree Chantarasak, blending Thai flavours with British ingredients. Within three months of opening, AngloThai earned a Michelin star.
In the 2025 National Restaurant Awards, AngloThai was named The Square Opening of the Year and ranked 7thin the Top 100 list, followed by KOL at number 50 and Lisboeta at 93rd place.
