Assistant General Manager
Casa do Frango
Assistant General Manager - Casa do Frango - MJMK Restaurants
KOL · Fonda · AngloThai · Luso · Casa do Frango · New Openings
(2 Michelin stars, World's 50 Best Restaurants)
£55,000 to £60,000 (dependent on experience)
Location: Full time, site-based, W1B, London
Casa do Frango is rooted in the food and culture of Portugal, inspired by co-founder Marco's upbringing around fire-cooking, family meals and trips to the local food markets. Casa means home, and that sense of generosity runs through everything from the kitchen to the welcome at the door. With three locations, London Bridge, Mayfair and Victoria, each critically acclaimed for its piri-piri chicken and welcoming, buzzy atmosphere, we're looking for an Assistant General Manager to lead the floor at Casa Mayfair.
This role exists to make sure every guest at Casa Mayfair has a great time, and that the team looking after them feels well trained, well led and set up to succeed. You'll be hands-on with dining room operations before, during and after service, from team briefings to looking after guests and VIP requests, across a busy site that includes a 125-cover dining room, a 100-cover event space and bar, two private dining rooms and a summer terrace, welcoming around 1,300 guests a week.
This role would suit someone who has managed a busy dining room before and takes real pride in doing things properly. It could suit candidates from full-service restaurant, hotel food and beverage, or high-volume hospitality backgrounds who love food, drink and hospitality.
This is a hands-on, floor-facing leadership role.
Key Responsibilities
- Lead and inspire the team to deliver seamless, energetic service across every shift.
- Run busy, multi-floor dining operations with confidence and control.
- Coach and develop the front of house team, building skills in service, upselling and menu knowledge.
- Set the tone for a warm, positive guest experience from the moment guests arrive.
- Handle guest feedback and special requests with professionalism and care.
- Monitor and drive performance against KPIs including guest satisfaction and sales per head.
- Maintain premium service standards across the restaurant.
- Ensure full compliance with health & safety, food hygiene and licensing regulations.
- Act on the General Manager's behalf when required, keeping standards consistent across every shift.
What We're Looking For
We're looking for a guest-first leader who sets the tone for every service. You will bring:
- Proven experience in a senior restaurant leadership role, ideally as an Assistant General Manager in a premium or high-volume venue.
- The ability to lead, train and develop a front of house team.
- Confidence running busy, multi-floor dining operations.
- A strong focus on delivering exceptional guest experiences, including handling special requests with professionalism.
- Composure under pressure, staying organised and detail-focused while managing high guest volumes.
- An eye for premium service standards and the know-how to coach the team on upselling and menu recommendations.
- A track record of working towards KPIs such as guest satisfaction and sales per head.
- A solid understanding of health & safety, food hygiene and licensing regulations.
- A proactive, guest-centric approach, leading by example on every shift.

About MJMK Restaurants
MJMK Restaurants owns and operates a collection of award-winning restaurants. Founded in 2018 by lifelong friends Jake Kasumov and Marco Mendes, our journey began with Casa do Frango.
In 2020, we partnered with chef patron Santiago Lastra to open KOL, a restaurant in Marylebone celebrating Mexican cuisine with British ingredients. KOL has since earned a Michelin star and been named one of the World's 50 Best Restaurants.
2024 saw two new ventures: Fonda, a contemporary Mexican concept in Mayfair, our second collaboration with Santiago Lastra, and AngloThai in Marylebone, a debut restaurant from husband-and-wife John and Desiree Chantarasak, blending Thai flavours with British ingredients. Within three months of opening, AngloThai earned a Michelin star.
In the 2025 National Restaurant Awards, AngloThai was named The Square Opening of the Year and ranked 7th in the Top 100 list, followed by KOL at number 50. Luso, a contemporary Portuguese restaurant in Fitzrovia, opened in September 2025.
We're building ambitious restaurant brands with a focus on quality, creativity and guest experience, and we're just getting started.
