Sous Chef Candidate Requirements:

  • Proven ability to maintain high food quality and consistency during service
  • Strong understanding of recipe specs, food prep methods, and portion control
  • Commitment to upholding presentation standards and kitchen discipline
  • Familiarity with BOH systems including Check 365, MarketMan, and other MJMK platforms
  • Confidence in placing accurate orders, stock control, and invoice entry
  • Experience managing kitchen maintenance and equipment issues efficiently
  • Ability to train, onboard, and support new team members effectively
  • Experience following HR procedures around performance, conduct, and development
  • Positive leadership style that builds morale and motivates junior team members
  • Champion of culture and teamwork in a fast-paced kitchen environment
  • Strong eye for cost control (labour, stock, waste) within set budgets
  • Skilled in tracking invoice discrepancies and managing supplier costs
  • Understanding of FIFO stock rotation and waste minimisation techniques
  • Ability to prioritise tasks, manage time effectively, and delegate clearly
  • Support the Head Chef by communicating supplier, staff, or kitchen concerns early
  • Confident in coaching senior team on leadership and training techniques

About Casa

Our journey began in 2018 with the launch of Casa do Frango in London Bridge – a Portuguese grill concept inspired by Marco’s Portuguese heritage and fond memories of his upbringing in Southern Portugal. Offering a menu of fresh, wood charcoal-grilled dishes in a warm atmosphere, it quickly became a local favourite. Building on this success, we were fortunate to be able to expand Casa to the neighbourhoods of Mayfair (2022) and Victoria (2023).


We’re looking for a Sous Chef to join our team at Casa Mayfair who will embody our passion for delivering exceptional guest experiences and help us continue to grow. The site welcomes around 1300 guest each week, a 125-cover dinning space, 100 cover event space/bar, two private dining room and a small terrace.

About MJMK Restaurants

MJMK Restaurants own and operate a collection of award-winning restaurants. Founded in 2018 by lifelong friends Jake Kasumov and Marco Mendes, our journey began with Casa do Frango. In 2020, we partnered with chef patron Santiago Lastra to open KOL, a fine dining restaurant in Marylebone celebrating Mexican cuisine with British ingredients. KOL has since earned a Michelin Star, named one the World’s 50 Best Restaurants list.


2024 saw the launch of two new ventures: Fonda, a contemporary Mexican concept in Mayfair—our second collaboration with Santiago Lastra—and AngloThai in Marylebone, the debut restaurant from husband-and-wife team John and Desiree Chantarasak, blending Thai flavours with British ingredients. Within three months of opening, AngloThai earned a Michelin star.


At the 2025 National Restaurant Awards, AngloThai was named 'The Square Opening of the Year' and ranked 7th in the Top 100 list, followed by KOL at number 50. September, saw the opening of Luso, a contemporary Portuguese restaurant in Fitzrovia.
