Our journey began in 2018 with the launch of Casa do Frango in London Bridge – a Portuguese grill concept inspired by Marco’s Portuguese heritage and fond memories of his upbringing in Southern Portugal. Offering a menu of fresh, wood charcoal-grilled dishes in a warm atmosphere, it quickly became a local favourite. Building on this success, we were fortunate to be able to expand Casa to the neighbourhoods of Mayfair (2022) and Victoria (2023).
We’re looking for a Sous Chef to join our team at Casa Mayfair who will embody our passion for delivering exceptional guest experiences and help us continue to grow. The site welcomes around 1300 guest each week, a 125-cover dinning space, 100 cover event space/bar, two private dining room and a small terrace.

Key Responsibilities
- Maintain high food quality and consistency throughout every service.
- Follow recipe specifications, prep methods and portion control across all sections.
- Uphold presentation standards and kitchen discipline at all times.
- Place accurate orders, manage stock control and handle invoice entry.
- Track invoice discrepancies and manage supplier costs closely.
- Apply FIFO stock rotation and minimise waste across the kitchen.
- Train, onboard and support new team members as they join.
- Coach senior team members on leadership and training techniques.
- Manage kitchen maintenance and equipment needs efficiently.
- Flag supplier, team or kitchen matters early, before they affect service.
What We're Looking For
We're looking for someone who leads by example in a busy, high-volume kitchen. You will bring:
- Proven experience maintaining food quality and consistency under pressure.
- Confidence with BOH systems, including Check 365 and MarketMan.
- An eye for cost control across labour, stock and waste.
- Experience following HR procedures around performance, conduct and development.
- A positive leadership style that builds morale among junior team members.
- Genuine enthusiasm for culture and teamwork in a fast-paced kitchen.
- The ability to prioritise, manage time effectively and delegate clearly.
- Skill in training and supporting new team members as they join.
- Solid understanding of FIFO stock rotation and waste minimisation techniques.

About MJMK Restaurants
MJMK Restaurants owns and operates a collection of award-winning restaurants. Founded in 2018 by lifelong friends Jake Kasumov and Marco Mendes, our journey began with Casa do Frango.
In 2020, we partnered with chef patron Santiago Lastra to open KOL, a restaurant in Marylebone celebrating Mexican cuisine with British ingredients. KOL has since earned a Michelin star and been named one of the World's 50 Best Restaurants.
2024 saw two new ventures: Fonda, a contemporary Mexican concept in Mayfair, our second collaboration with Santiago Lastra, and AngloThai in Marylebone, a debut restaurant from husband-and-wife John and Desiree Chantarasak, blending Thai flavours with British ingredients. Within three months of opening, AngloThai earned a Michelin star.
In the 2025 National Restaurant Awards, AngloThai was named The Square Opening of the Year and ranked 7th in the Top 100 list, followed by KOL at number 50. Luso, a contemporary Portuguese restaurant in Fitzrovia, opened in September 2025.
