Candidate Requirements:

  • Minimum 3 years’ experience in a Head Chef position within a high-performing, quality-driven kitchen environment.
  • Passionate about delivering exceptional guest experiences through consistently excellent food, presentation, and service. Leads from the front and sets the tone for kitchen standards and hospitality.
  • Strong people manager with a proven ability to lead, inspire, and develop kitchen teams. Handles performance and personal matters with professionalism, empathy, and fairness.
  • Exceptional leadership and delegation skills, able to manage team responsibilities effectively. Maintains a calm and controlled presence, even under pressure. Trusted to ensure kitchen operations run smoothly in their absence.
  • Experienced in recruitment, training, and progression planning. Develops a strong pipeline of talent through structured onboarding, mentoring, and hands-on coaching.
  • Unwavering attention to detail, proactively identifying and resolving issues that affect food quality, team efficiency, or guest satisfaction.
  • Driven by consistency, quality, and continual improvement. Implements and maintains rigorous kitchen procedures and systems. Thinks strategically and constructively about long-term challenges and opportunities.
  • Comfortable overseeing all kitchen operations, including collaboration with front-of-house, bar, events, reservations, and suppliers to ensure cohesive and efficient service.
  • Commercially astute, with experience in managing kitchen P&L. Optimises revenue through menu engineering, cost control (labour, GP, wastage), and productivity planning.
  • Maintains the highest standards of hygiene, cleanliness, and maintenance across all kitchen areas. Takes pride in a well-run, spotless environment that reflects excellence at every level.

About MJMK Restaurants

MJMK Restaurants own and operate a collection of award-winning restaurants. Founded in 2018 by lifelong friends Jake Kasumov and Marco Mendes, our journey began with Casa do Frango. In 2020, we partnered with chef patron Santiago Lastra to open KOL, a fine dining restaurant in Marylebone celebrating Mexican cuisine with British ingredients. KOL has since earned a Michelin Star, named No. 17 on the World’s 50 Best Restaurants list.


In 2022, we launched Lisboeta, a premium restaurant in Fitzrovia with renowned Portuguese chef patron Nuno Mendes. 2024 saw two new ventures: Fonda, a contemporary Mexican concept in Mayfair - our second collaboration with Santiago Lastra - and AngloThai in Marylebone, a debut restaurant from husband-and-wife John and Desiree Chantarasak, blending Thai flavours with British ingredients. Within three months of opening, AngloThai earned a Michelin star.


In the 2025 National Restaurant Awards, AngloThai was named The Square Opening of the Year and ranked 7th in the Top 100 list, followed by KOL at number 50 and Lisboeta at 93rd place.
